Wild rice and carolina rice are mixed with pumpkin, pomegranate seeds, toasted almonds, avocado, and our delicious sesame sauce. We then dot the salad with hummus, chickpeas, avocado and fresh herbs. This is a wonderful side dish or can be shared to make a vegan main. We like this at room temperature but some folks like to heat it warm. Wanna make it stretch even further? Put this in a whole grain wrap, add lettuce and tomatoes and you have a vegan main! The healthy meal possibilities are practically endless with this autumnal mix!
