Hyper local. How local? Our family has a bit of land in Vich, VD. Just a few km from our labo. In Vich, the parents of Grégoire passionately cultivate some walnut trees. Every autumn, they hand collect the nuts, shell them by hand and then cold press them in the old fashioned way.

The nut oil is SO FLAVORFUL. You can use it sparingly to flavor the perfect salad sauce, dress some garden fresh veggies or whatever your culinary imagination can come up with.
